杭(hang)州(zhou)2016年8月12日(ri)(ri)電(dian) /美通(tong)社/ -- 日(ri)(ri)前,為(wei)了提高開元酒店菜(cai)肴研發和(he)創(chuang)新能(neng)力(li),增強集(ji)團餐飲(yin)品牌“開元齊味”的核心競爭力(li),開元酒店集(ji)團成(cheng)立了菜(cai)肴研發中心,并于8月9日(ri)(ri)在(zai)寧波舉行了首場創(chuang)新菜(cai)肴推薦會(hui)。
開元(yuan)酒(jiu)(jiu)(jiu)店(dian)(dian)菜(cai)(cai)(cai)肴研發中(zhong)心(xin)由酒(jiu)(jiu)(jiu)店(dian)(dian)集團(tuan)(tuan)運營部牽頭組織,聯(lian)合前(qian)期(qi)集團(tuan)(tuan)“星(xing)廚(chu)駕(jia)到”選拔出(chu)的“十大星(xing)廚(chu)”,每(mei)四(si)人一(yi)組,以季度(du)(3個月)為(wei)單位進行(xing)每(mei)期(qi)菜(cai)(cai)(cai)肴的研發,并(bing)(bing)選擇一(yi)家酒(jiu)(jiu)(jiu)店(dian)(dian)進行(xing)現(xian)場(chang)制(zhi)(zhi)(zhi)作(zuo),邀(yao)請酒(jiu)(jiu)(jiu)店(dian)(dian)所在區(qu)(qu)域(yu)各(ge)家開元(yuan)酒(jiu)(jiu)(jiu)店(dian)(dian)的總(zong)經理、總(zong)廚(chu)進行(xing)試(shi)吃(chi)、點評,并(bing)(bing)根據匯總(zong)意見,改進完善成品(pin)后,把(ba)所有菜(cai)(cai)(cai)肴資料發給(gei)區(qu)(qu)域(yu)各(ge)酒(jiu)(jiu)(jiu)店(dian)(dian)的總(zong)廚(chu),并(bing)(bing)前(qian)往廚(chu)房現(xian)場(chang)對(dui)菜(cai)(cai)(cai)肴進行(xing)制(zhi)(zhi)(zhi)作(zuo)教學。研發中(zhong)心(xin)在酒(jiu)(jiu)(jiu)店(dian)(dian)總(zong)廚(chu)的制(zhi)(zhi)(zhi)作(zuo)過程中(zhong)會做好指導(dao)工作(zuo),并(bing)(bing)對(dui)菜(cai)(cai)(cai)品(pin)進行(xing)考(kao)核,把(ba)控每(mei)一(yi)個制(zhi)(zhi)(zhi)作(zuo)環節,把(ba)關(guan)菜(cai)(cai)(cai)品(pin)品(pin)質。
開(kai)(kai)元(yuan)(yuan)(yuan)酒(jiu)(jiu)店(dian)(dian)(dian)菜(cai)肴(yao)(yao)(yao)研(yan)發中(zhong)心(xin)首(shou)期(qi)創(chuang)新菜(cai)肴(yao)(yao)(yao)推廣會(hui)在寧(ning)(ning)波(bo)開(kai)(kai)元(yuan)(yuan)(yuan)名(ming)(ming)(ming)都大(da)酒(jiu)(jiu)店(dian)(dian)(dian)舉行(xing)。本期(qi)的四(si)位星廚是杭州(zhou)開(kai)(kai)元(yuan)(yuan)(yuan)名(ming)(ming)(ming)都大(da)酒(jiu)(jiu)店(dian)(dian)(dian)的陳(chen)利江、開(kai)(kai)元(yuan)(yuan)(yuan)酒(jiu)(jiu)店(dian)(dian)(dian)集團(tuan)中(zhong)央(yang)廚房(fang)姚(yao)劍、義烏三鼎開(kai)(kai)元(yuan)(yuan)(yuan)名(ming)(ming)(ming)都大(da)酒(jiu)(jiu)店(dian)(dian)(dian)丁亮和(he)(he)浙江三立開(kai)(kai)元(yuan)(yuan)(yuan)名(ming)(ming)(ming)都大(da)酒(jiu)(jiu)店(dian)(dian)(dian)韓翔,他們針對寧(ning)(ning)波(bo)區域(yu)(寧(ning)(ning)波(bo)、余姚(yao)、寧(ning)(ning)海(hai))特(te)(te)點(dian),推出適合(he)當(dang)(dang)地(di)特(te)(te)色(se)的創(chuang)新菜(cai)肴(yao)(yao)(yao),包含6道(dao)冷(leng)菜(cai)、9道(dao)熱菜(cai)和(he)(he)3道(dao)點(dian)心(xin)。當(dang)(dang)晚,開(kai)(kai)元(yuan)(yuan)(yuan)酒(jiu)(jiu)店(dian)(dian)(dian)集團(tuan)總經理(li)陳(chen)妙強和(he)(he)寧(ning)(ning)波(bo)區域(yu)各酒(jiu)(jiu)店(dian)(dian)(dian)的總經理(li)、總廚參加(jia)了當(dang)(dang)晚的菜(cai)肴(yao)(yao)(yao)品鑒會(hui)。品鑒會(hui)上,參加(jia)人員對本期(qi)的創(chuang)新菜(cai)肴(yao)(yao)(yao)進行(xing)品嘗和(he)(he)交(jiao)流(liu)。8月(yue)10日,十位星廚前(qian)往寧(ning)(ning)波(bo)當(dang)(dang)地(di)特(te)(te)色(se)餐飲、酒(jiu)(jiu)店(dian)(dian)(dian)考察(cha)交(jiao)流(liu),為賓客精(jing)心(xin)研(yan)制更多(duo)的美味大(da)餐。
開(kai)元酒(jiu)店(dian)集(ji)團運營(ying)(ying)部相關負責人表示,本次在(zai)寧波推(tui)出的(de)創(chuang)(chuang)新菜肴(yao)(yao)(yao)推(tui)廣會(hui)是第一站,后(hou)續將繼續以“星(xing)廚(chu)+”概念,運用(yong)品牌推(tui)廣、星(xing)廚(chu)菜肴(yao)(yao)(yao)視頻并結合(he)各酒(jiu)店(dian)自身經營(ying)(ying)特(te)點,推(tui)出 “星(xing)廚(chu)+菜肴(yao)(yao)(yao)”、 “星(xing)廚(chu)+婚宴(yan)”、 “星(xing)廚(chu)+營(ying)(ying)銷活動”等(deng)系列產(chan)品。接(jie)下來他們還(huan)會(hui)走(zou)進更多的(de)開(kai)元酒(jiu)店(dian),為賓客創(chuang)(chuang)新更多美食佳肴(yao)(yao)(yao)。
